Sweet Potato Salad


  • 2 Sweet potatoes
  • 1 Courgette
  • 1/2 Red pepper
  • 1 Aubergine
  • Mushrooms
  • 1 Onion
  • Extra Virgin Olive oil
  • 1 Tsp. Apple cider vinegar
  • 1 Tbs. Tamari sauce
  • Pepper
  • Salt
  • Fresh coriander


  1. Cut all the vegetables into small pieces, put some olive oil, salt and pepper.
  2. Bake the sweet potato for 15 minutes and then put the rest of the vegetables in the oven too.
  3. When all the vegetables are cook and soft take them out from the oven and let them cool down.
  4. Chop the coriander and add it to your salad, mix it with the vinegar, the tamari sauce and olive oil.
