Spicy Muffins

INGREDIENTS

  • 1 Cup spelt flour
  • 1/2 Cup cane sugar
  • 1 Tsp Baking soda
  • 1 Tbs Cinnamon powder
  • 1/4 Tsp. Nutmeg powder
  • 1/4 Tsp. Cardamom powder
  • Fresh ginger
  • 1/8 Cup Coconut oil
  • 1/3 Cup Almond milk
  • 2 Eggs
  • Pinch of salt
  • Walnuts
  • 1/4 Cup raisins
  • 1 Apple

METHOD

  1. Beat the egg and mix it with the melted oil, the almond milk and the grated ginger.
  2. In another bowl mix the flour, baking soda and the spices.
  3. Mix all the ingredients in one bowl and add the raisins and cut apple.
  4. Bake your muffins with some chopped walnuts and sugar on the top.

Better to eat it the next day so that the flavors of the spices settle, if you eat it freshly made you will notice a slightly unpleasant taste from the nutmeg, the next day it is exquisite!
