Carrot cake Muffins

INGREDIENTS
- 2 Cups spelt flour
- 1 Cup cane sugar
- 1 Tsp. Baking soda
- 1 Tbs. Cinnamon powder
- 10 gr. Fresh grated ginger
- 150 gr. Grated carrots
- 1/2 Cup coconut oil
- 2 Eggs
- 1/4 Cup Almond milk
- 30 gr. Raisins
- Pinch of salt

METHOD
- Mix the flour with the sugar, baking soda and the salt.
- Mix the carrots with the melted coconut, the eggs and the milk in another bowl and add them to the dry ingredinents.
- Add the raisins and mix everything.
- Bake your muffins until when you pinch them with a knife it come out clean.
