Carrot cake Muffins

INGREDIENTS

  • 2 Cups spelt flour
  • 1 Cup cane sugar
  • 1 Tsp. Baking soda
  • 1 Tbs. Cinnamon powder
  • 10 gr. Fresh grated ginger
  • 150 gr. Grated carrots
  • 1/2 Cup coconut oil
  • 2 Eggs
  • 1/4 Cup Almond milk
  • 30 gr. Raisins
  • Pinch of salt

METHOD

  1. Mix the flour with the sugar, baking soda and the salt.
  2. Mix the carrots with the melted coconut, the eggs and the milk in another bowl and add them to the dry ingredinents.
  3. Add the raisins and mix everything.
  4. Bake your muffins until when you pinch them with a knife it come out clean.
