Pancakes with Apple Compote

INGREDIENTS
- 1 Cup buckwheat flour
- Almond milk
- 1 Tsp. Cinnamon powder
- 1/2 Tsp. Vanilla
- 2 Tbs. Flax seeds
- 1 Tsp. Baking soda
- 1 Tsp. Kuzu
- 20 Almonds
- 1 Apple
- 1 Cinnamon stick
- 1 Tbs. Raw honey
METHOD
- Peel and cut the apple and boil it witht the cinnamon stick until is soft. When is cook just blend it.
- Crushed the almonds and put them in a pot with the honey and stir until caramelized.
- Mix the flour with the cinnamon powder and the baking soda.
- Dissolve the kuzu in a glass with a bit of milk and add it to the mix.
- Add milk until the mixture is almost liquid but a bit thick.
- Cook the pancakes in a pan and serve them with the apple compote and the caramelized almonds.
