Pancakes with Apple Compote

INGREDIENTS

  • 1 Cup buckwheat flour
  • Almond milk
  • 1 Tsp. Cinnamon powder
  • 1/2 Tsp. Vanilla
  • 2 Tbs. Flax seeds
  • 1 Tsp. Baking soda
  • 1 Tsp. Kuzu
  • 20 Almonds
  • 1 Apple
  • 1 Cinnamon stick
  • 1 Tbs. Raw honey

METHOD

  1. Peel and cut the apple and boil it witht the cinnamon stick until is soft. When is cook just blend it.
  2. Crushed the almonds and put them in a pot with the honey and stir until caramelized.
  3. Mix the flour with the cinnamon powder and the baking soda.
  4. Dissolve the kuzu in a glass with a bit of milk and add it to the mix.
  5. Add milk until the mixture is almost liquid but a bit thick.
  6. Cook the pancakes in a pan and serve them with the apple compote and the caramelized almonds.
