Sweet Potato Salad

INGREDIENTS
- 2 Sweet potatoes
- 1 Courgette
- 1/2 Red pepper
- 1 Aubergine
- Mushrooms
- 1 Onion
- Extra Virgin Olive oil
- 1 Tsp. Apple cider vinegar
- 1 Tbs. Tamari sauce
- Pepper
- Salt
- Fresh coriander
METHOD
- Cut all the vegetables into small pieces, put some olive oil, salt and pepper.
- Bake the sweet potato for 15 minutes and then put the rest of the vegetables in the oven too.
- When all the vegetables are cook and soft take them out from the oven and let them cool down.
- Chop the coriander and add it to your salad, mix it with the vinegar, the tamari sauce and olive oil.
