Spanish Ratatouille

INGREDIENTS
- 1 Onion
- 1 Pepper
- 1 Courgette
- 1 Aubergine
- 2 Carrots
- 2 Tomatoes
- Pepper
- Salt
- Olive oil
- Parsley
METHOD
- Cut the vegetables in small pieces.
- Cook the onion in a pot for 3 minutes with a little bit of olive oil, add the pepper, the courgette and the carrots and cook for 3 more minutes at high heat.
- Add the aubergine, the tomatoes and the spices.
- Put it in low heat, add some water and cover the pot, let it cook until all the vegetables are soft.
- Serve it with some basmati rice.
