Spanish Ratatouille


  • 1 Onion
  • 1 Pepper
  • 1 Courgette
  • 1 Aubergine
  • 2 Carrots
  • 2 Tomatoes
  • Pepper
  • Salt
  • Olive oil
  • Parsley


  1. Cut the vegetables in small pieces.
  2. Cook the onion in a pot for 3 minutes with a little bit of olive oil, add the pepper, the courgette and the carrots and cook for 3 more minutes at high heat.
  3. Add the aubergine, the tomatoes and the spices.
  4. Put it in low heat, add some water and cover the pot, let it cook until all the vegetables are soft.
  5. Serve it with some basmati rice.
